Kevin’s Homemade Salsa – Oh My!
Hi, we have been canning- Kevin’s salsa. Have you ever had homemade salsa? It is a treat for sure! Kevin usually plants a garden every summer, with last year being the first time he has not. Our cabinets have been absent of this wonderful treat. This summer we have twelve tomato plants producing fantastically. We are just beginning our canning and already have seventeen quarts of salsa.
The time we spent together canning was priceless. We talked and laughed, a wonderful feeling. It’s amazing that after 31 years of marriage, we are now really spending time together. You know the scene- boy meets girls, boy and girl fall in love, get married and have children. When our children were growing up, I was the one who took them to all of their events. Kevin was at home cooking our dinner and various yard/land maintenance. In many ways I really appreciated and yet resented this. He was missing out on so many of our children’s activities/memories. As the kids matured into young adults, Kevin has played such a huge important part. I won’t go into all the details, but believe me, the Good Lord has a plan. It’s believing this, which is the key! Today, Kevin is an excellent chef/cook. In this chapter of our lives, we have more time to spend together.
Back to the salsa;
There isn’t any particular recipe to share. Kevin uses the same ingredients, but measures to taste. Each batch may be a bit different, but every batch tastes delicious. Here is a list of the ingredients:
– Tomatoes (15 – 20 lbs)
– Jalapeno Peppers
– Habanera Peppers
– Canning Salt
